Can and has been done. The tire will "crown" a bit, and wear faster in the center. They will also squirm a bit, since the sidewall will widen toward the tread.
For rock crawling, it does protect the rim and the bead area of the tire from pinches.
I prefer a 10" wheel with a 12.5 tire.
