Dont know if this is right or not, but since I DONT know I am gonna take a guess.
To me it looks like the valves have been spread farther apart, therefor allowing bigger valves to be used. Now My other guess would be that since the valves are no longer in line with the pushrods, that they put them at a slight angle, so that the rocker arm can get a even contact on the top of the valve stem. Cause if you left them on parralell plains, the rocker arm would not be contacting flat on the top of the valve stem when it is being pushed down, it would only be contacting the edge. So you tilt the valves slightly and also the rocker mount to where they now contact it evenly across their travel when the valve opens. On the old heads the valves are paralell, on these they are almost slightly in a V shape when compared to each other.
OK, now tell me MC, am I right??? Or am I a complete dumb a** and need to be smacked in the face with a big fish for trying to think. Like I said, I have no idea, I am just guessing at ALL of this.
