I have noticed some guys having their blocks shotpeened, and I can't help but wonder if this is really necessary. I mean, the newest AMC block casting is around 14 years old, most are nearly 30 years old, I would think that they would be pretty well seasoned and settled by now. Opinions?

The shot blasting you are referring to is not to stress relieve the block, but is rather a way to clean the block that does not offend the EPA. Same with the baking ovens, although the EPA is keeping a close eye on that technology. If there is any benefit to the shot blasting that would be noticed in the performance of the engine, it is coincidental and not planned. Incidentally, in most cases of shot cleaning, the block is rolled around in a drum with the shot bouncing off the block by gravity intermittently rather than the contolled pressurized shot dispensers used in shot peening.

tumble blasting the block does stress relieve the block and cleans it up at the same time

Hey Fuzz, you've built a few (likely dozen) more AMC's than me, how have they held up for ya'?
